Hey ladies!

So, I've just moved to D.C and I am about to embark on a crazy lifestyle in the city and I have one BIG problem - FOOD! I had a pretty good "tester" day yesterday, but I was only able to eat 1200 calories. I need a lot more than that SO - any suggestions for some foods that I can cook early in the week and still use later in the week?

I'm literally down for anything EXCEPT canned tuna. Legit - makes me gag. I'm also tight on cash or else I'd just eat in some cafe. Oh the life of a poor college student. Please help!:)

At the beginning of the week, cook up a bunch of rice, pasta, beans, chicken, beef, and veggies.

Throughout the week, mix together protein/carb/veggies and ad any type of sauce.

Eggs, oats, peanut butter, yogurt, milk, whey, bread. All cheap and versatile.

Buy in bulk whenever possible and look for sales. Crockpots are awesome if you have a kitchen. Add meat, potatoes, veggies, and broth. Make a big batch of chili.

I know this might sound gross, but it's really pretty good and cheap.

1 lbs lean ground turkey (add whatever seasoning...maybe 1/2 a packet of taco) -drain the fat after cooking (I place in a strainer and press it out)
1 C (uncooked) Brown rice (buy a rice cooker!!!) add a little salt and olive oil
12 egg whites

Cook each of these separately, then add them all together (tastes like a naked burrito), mix it all up and split it between however many containers you want to make a serving with. Throw them in the freezer, and then throw them in your bag. Fridge is fine too. But, if you want variety, take the other suggestions of the other reply, and place in freezer. Heat it up when you want to eat it. If you can afford the calories / fat...sprinkle a little 2% cheese on the top.

You could throw on a bed of spinach too for a variation of a taco salad.

Do you have access to a microwave? If not, I like to bring things like:

low carb wraps with peanut butter (or regular wraps)
Protein sludge with peanut butter
Protein pancakes (I like them cold too)
Cottage cheese mixed with oats and nut butter or berries
I like cold chicken too- maybe I'm weird! But I like to mix baked sweet potatoes with chicken and peanut butter or walnuts
Trail mix
Tuna packets
Homemade muffins/bars
Protein bars
"cold" oats" or "muesli"- mix oats with yogurt and milk the night before (add in whatever else you want) and let sit overnight!

Yumm... you have a lot of weird mixtures...But I love it....
Here is one for you to try.... Hard Boiled Egg White (cut in half), in the hole of the egg (where the yolk goes) put a teaspoon of almond butter (I grind my own, so it's kinda crunchy)....it's weird, but it tastes really good, and the extra texture of the almonds help me eat the eggs.

I make tons of chicken chilly during my weekend. I reheat it in the morning and put it in a thermos. Its really nice, warm, cozy, has plenty of proteins and carbs and is low fat!

1 lbs of chicken breast
1 can of red kidney beans (500 mL or g?! I dont remember)
1 can of chickpeas
1 large can of tomatoe sauce + half a can of water
half a spanish onion
half a cup of green peppers (and other veggies that just need to be cleared from that fridge)
3 cloves of garlic
1 tsp of chilly powder, 1 tsp of onion powder, salt n pepper, 1 tsp cayenne pepper (or less),

its about 270 calories per half cup...22 g of protein, 3.2 g of fat, 37.7 g of carb (with 9.8 g of dietary fiber!)

Hahaha yeah, I'm crazy! You can make an egg white "pancake" by blending egg whites with a pinch of baking powder and cream of tartar- it's super good surprisingly!

I pack fresh cut veggies and a small cup of humous everyday for lunch (humous helps me to get my fats) and I usally add boiled eggs or baked chicken for proteins. You can add a piece a bread or some rice. I also make different type of protein bread/muffins/cakes during the week end. I'm trying to find a good reicipe of protein-bran biscuits so I could make a bunch of it and store them in a box at work for "emergency craving" (healthier than a toast with butter or a big buttery muffins...)
I would say than the key is to have small tupperware and a cooler bag so your food will stay fresh.

I always take Sunday evenings and cook a crapload of food for my work week.
Chicken and rice stays good, I separate it throw it into containers for the week.
I'll usually hard-boil a carton of eggs, that way I can just grab 'em as I need them.
Nuts are always good too!
Try experimenting with some baking, like homemade protien bars and muffins. They last about a week and there always good on the go.
You can mix greek yogurt with a scoop of protien and throw in some pumpkin, or peanut butter, anything that floats your boat really.
Oh the endless possibilities! Search around the forums and on recipe sites. You'll find TONNNS of stuff! Good Luck! :)
