8 Months from now are football tryouts and I want to start on Varsity as a tight end. I've lifted seriously for 2-3 months now on SS. Assuming I stay on a 500-1000 calorie surplus with a clean diet, enough sleep/protein, and supplements, how big and strong can I get in 8 months? I'm doing Starting Strength untill I stop making gains then I'll switch to Madcows 5x5

i'll look at it right now, is mass more important than strength as far as football goes? as a tight end

WS4SB!!!!!!!!!!!!!!!!!!!!!!!!
Eat. Work hard. Sleep.
Don't forget to work on your technique for football. If your school uses a tight end for blocking more work on your blocking, or routes if they pass to you.
And do some all out sprints atleast once a week. Speed kills.

SS is not a program tailored for athletes, i know it because i did it and got injured from muscle imbalance.
you have to add back work, rotator cuff work and posterior chain. i suffered a rotator cuff injury because i had an imbalance between my front delt and rear delt. SS offers no pulling movements excepts pullups(and even that is an option later in training).

we are football players... specifically SKILL. screw mass, we need strength and speed.

To the OP, if you want to get strong then do madcow, after SS. It will definitely get more strength to you then ws4sb. As far as mass increase, you will get plenty of mass if you eat that 1000 cals more. I'd try ws4sb after the cycle of madcow which can take you around 8-10 weeks before stalling.
I just think that there's no need to workout 4 times a week to get bigger and stronger, at least when you're novice/ intermediate.
As above poster said. You hae to include rear delt work after SS session or madcow session.
Face pulls, scarecrows, rear delt flyes etc. And external rotation work. Just to keep your shoulders healthy. And some glute ham raises, hip thursts and glute bridges., etc, for posterior chain.
