I categorize this on my list as a FAT because it has more fat than protein(when trying to aim for a 30%P 0gC 65%F keto diet)
73/27 = 20% Protein and 78% Fat.
I consider the 73/27 a great asset/tool for me and eat a ****load of it.
Are there any health risks to eating SO much 73/27?

really depends on what kind of ground beef you're buying - fresh ground, or, frozen tubes of bulk meat (cheap)?

I thought they are fresh ground, but then I've also seen where the same ones have been frozen when they sell them
so I dont know which it is?

i guess the message is that it's safer to buy fresh-ground beef from a grocery store or butcher, and don't buy super-cheap frozen hamburger in bulk. there are a lot of different qualities of ground beef available, and it's worth it to pay a little more for safer handling and better cuts of meat.
75/25 ground beef will always be the least expensive option though no matter where it comes from; most people buy leaner mixes, the higher the % of meat, the more expensive. i'm usually happy with 80/20 mix.
