tuna recipe :

1 can tuna
1 slice SHarp Cheddar Cheese
Salsa/pico de gayo

Heat on a plate, then stir.... you now have a variation of King Ranch Chicken (but with tuna)

I eat this almost every day:

Mix two cans of tuna with mayo, pepper, seasoning salt, and a tad of mustard.

Chop up 2-3 cups of lettuce and a cup of broccoli

mix the chopped broccoli and lettuce and throw on a plate, cover with tuna.

cover with full fat ranch dressing.

If you are getting ancy and need a quick snack try this (dont over do it with this one though):

-Enough pepperoni to cover the surface area of a plate.

-Top with mozerrella cheese

-throw that bitch in the microwave

-throw some tabasco sauce on...and enjoy.

(I have also put a tad of ranch dressing over it instead of tabasco...thats pretty good too)

Bump! I almost went mad the last time I went on keto because I was having chicken and... olive oil to make up the fats. When I was short of time I would take a couple of cans of tuna, and the olive oil bottle with me to work, and swig 50ml of oil with my tuna. Gorgeous. So shoot away with your ideas guys!

I have one idea to start you off:

Have one plate of Leafy salad (beetroot leaves, spinach leaves etc)
Crumble 75g of Cheshire cheese over the top (can be cheddar)
Fry 2 strips (50g) of bacon and arrange to make a nice big healthy salad. Your girlfriends may enjoy this too.

Altogether
450-500kcal 30g protein, and lots of fat.

Take a couple chicken breasts, dip in egg, then dip in Keto brand Keto Crumbs(I love this stuff!). Pan fry in olive oil-or canola, your choice. While the chicken cools, tear up some Romaine lettuce, and maybe some thinly slice onion. Then slice chicken into 1/2 in. strips. Lay it on top of the lettuce, then grate some Parmesan or Romano cheese over that. Finally, pour some full-fat Caesar dressing on top. This recipe kicks ass! So simple, just a keto version of a Chicken Caesar salad. Probably already been posted before, but in case it has'nt...

OK my favourite:

Grate some cheese, mix in a bowl with a couple of tbls of mayo. While your doing this cook a gammon steak/chicken breast. Once the meat is cooked spread the cheese/mayo over it and put under a grill until the cheese is melted. Serve with salad.

Pepperoni is really nice in it too.

No I mean gammon, organic of course to avoid some of those nitrates.

Today I made some turkey burgers, Just minced turkey (450g), plus a couple of eggs, plus grated cheese (100g) and onions, mixed it up by hand and shallow fried it. Made 6 burgers, about 250kcal per burger and 30-35g of protein. Had it with salad.

Egg Noodles:

Ingredients:

* 3 egg yolks
* 3 egg whites
* 1 teaspoon cream of tartar
* 1/2 teaspoon salt

Beat 3 egg whites with cream of tartar until very stiff. Fold in the egg yolks and salt. Place this mixture on a greased baking sheet with sides (like a jelly roll pan) in case some runs off the sides. Spread evenly into a thin coat. Bake 350 degrees for 10-12 minutes or until lightly browned. Allow to cool slightly, remove with by running a knife under the baked mixture to loosen, and slice into "noodles".

I always had difficulty with getting enough fats - I'd eat some chicken for the protein and was left with 300kcal of fats to make up for a meal.

A great sauce to make up is this:

1 cup sour cream (200ml)
1/2 cup onions
Couple teaspoons mixed chillis
1/2 teaspoon pepper
1/2 teaspoon salt

Mix it all up, stick it in the fridge and heat and serve when you want!

Another sauce is to just simply gently heat (not boil it tends to seperate and leave you with oil and solids) some double cream and some finely heated cheese of your choice (finer it is less you need to heat it to melt it) a little salt and pepper and hey presto keto compatible cheese sauce without the flour and milk. :)

A few tips from a newbie, but this is for others who don't know exactly what to look for.

(1) CostCo has: Turkey/Chicken sausage links; the tomato basil flavor (i think) has less than 1 g carb, and over 200 calories, with a good protein/fat split. A whole boat-load for $10.

They also have pine nuts. 220 cal's per serving and i think only 1 gram of carbs. Superior to any nut i've seen thus far. A whole truckload of these nuts for $10.

They also have string cheese, which shows up as appx ZERO carb.

Finally, they have Aloe Splash, which is a drink made with some splenda sweetener. This is 0 cal 0 carb (tastes really f*cking good). Other zero carb foods at costco include: Albacore tuna, Salmon, other fish (mahi mahi, orange roughy, etc), crab, etc. I'm not telling you what to eat, just giving you some ideas when looking for zero carb.

(2) My Local hippie CO-OP has: Fake (non-dairy) "Sour Supreme" Sour cream which has only 1 g carb per 2 tbsp. That's about 25% of what regular full fat sour cream has. They also have West Soy Milk, unsweetened, which has 5g of carbs per cup, but 4 of that is fiber! wow a 1 carb milk, astounding!

Now, here are my staple recipes:

Poor Man's Tuna/Chicken Fajita:

1 can of albacore tuna or 1 can shredded chicken breast
3 tbsp hot sauce (i use Tapatio)
2 tbsp non-dairy sour cream
1/3 to 1/2 small to medium head of iceberg lettuce

mix the tuna/chicken with 2 tbsp hot sauce, breaking up the meat. heat in the mic for 1 minute. then add the sour cream, the iceberg lettuce chopped up really small like taco bell does, and the last tbsp hot sauce. I like the lettuce to have some zing, that's why i add the last tbsp of hot sauce at the end.

calories: 267
carb: 8.85 g - 4.61 (fiber) = 4.24 (that's w/ a half a 6" head)
fat: 7g
protein: 43g

I usually add in the flax oil here to even out the energy profile.

Yummy Strawberry Milkshake:

1 cup West Soy Milk
1 serving Isopure Strawberry Protein mix (whey)
1-3 tsp of Splenda (to taste)

mix it up. at your option, you may add some ice cubes, throw it in a blender, and make a thicker milkshake out of it.

nutrition:

calories: 190
carbs: 5g - 4g (fiber) = 1g
fat: 5g
protein: 25g

again this can be augmented with some extra fat, or a fatty meal like cheese and salami.

Keto Nighttime Pudding!

1 serving Pro Perforamnce PM protein (40/60 casein/whey)
1 tbsp natural peanut butter
1/2 cup West Soy milk
1-3 tbsp splenda, to taste

mix it all up. if you don't like the consistency (it's thick), then add another 1/4 cup soy milk and refridgerate for 2 hours. this is the yummy'est sweet-tooth thing I can think to eat on keto.
