What are your "mainstays" for carbs? What do you find yourself eating the most of?
I have an intolerance and would prefer to stay away from Gluten if I can, so I would love some ideas from people who are living this lifestyle.

I have a minor gluten intolerance. I don't eat any pasta, regular bread or the like.
I eat Ezekiel bread because it has zero sugar though I am not entirely sure if it is wheat free. I eat heaps of rice, oats and barley.
I have a big sack of oats and brown rice in my cupboard. If I ever make soup I put barley in EVERY soup ...thats how much I like it lol.

For some yes, others no. I have to stay away from gluten too, but I eat oatmeal daily and do fine. For other carbs I eat sweet potatoes as well as other veggies, bananas, and drink POM juice. No pastas, rice, or breads for me.

You can try "gluten free oats" , quinoa flakes, spelt, ,millet, ezekiel in moderation, sweet pot, jay robb yammit, brown rice, gluten free cereals

Thanks everyone! I think I might try oats this weekend and see how I do with them. Maybe I will luck out and they will not bother me.

YES! excellent source for carbs...though I dont consume too many because I am currently restricting my carbs to ones with zero sugar

I make the blueberry pancakes that uses rolled oats flour. It's from the biggest looser diet plan and I found it at prevention mag online.
omg, it's so yummy. I make batch of 20 and freeze the extras, the defrost as needed. I use Polamar jam (sweetened with fruit juice, no sugar) instead of syrup. ++
Pasta/white bread/etc. makes me feel icky now. I cannot eat much of it. The idea of eating anything made of regular white flour just turns my stomach. So, it makes avoiding no-no foods that much easier!

There is a big difference in being "a little gluten intolerant" and having celiac disease which requires a totally gluten-free diet. I have lived with this disease for a year now and have discovered many great ways to eat like a bodybuilder and remain gluten free. I'd be glad to share recipes and ideas. I just found out that is what has been making me sick for the past couple years anyway. I have started shopping for carbs at Whole Foods. I eat a lot of fruits and veggies (of course meat). When I feel like sweets I make up some of my gluten free, dairy free chocolate cake. I think its a blessing! I have had such an easier time with my diet.

We can eat oats? I always get sick when I have oatmeal..?? Im new to the gluten free diet. Im just sick of being sick!

Oats themselves do not naturally contain the gluten that triggers a reaction, but most oats are processed (transported, rolled, ground, packaged, milled, whatever) on equipment that is also used for wheat, so it is usually "contaminated." You can buy GF oats at a health food store but they are pretty expensive.
That may be the reason they make you sick, or it may just be that oats make you sick.
Have you been tested for celiacs disease? (a blood test looking for the proteins that eat away the small intestine lining)

I make all my breads, pastas, etc. from my arsenal of grain and bean flours:
Brown rice flour
Soy flour
Sorghum flour
Millet flour
Garbanzo flour
Quinoa flour
Buckwheat flour
Corn meal
Potato flour
Amaranth flour
Tapioca starch
Corn starch
Potato starch
Then there are all the great regular carbs:
yams
potatoes
brown rice
corn
squash
pumpkin
cauliflower
pinto beans
white beans
red beans
lentils
peas
There is no end to the great food you can fix. Who needs wheat!?

I too have been diagnosed with celiac disease this year and I'm shocked my the difference in my energy levels since abstaining from gluten completely. I've gained 40lb over a course of a few months just from working out and excluding it from my diet. Whole Foods and Down to Earth have everything to make living with celiac tolerable, as they have tons of GF foods like pizzas, muffins, oats, waffles, buns, and much more. Eating GF is also much healthier as most of the starches are made with whole grains and are rich in protein and fiber.

I'm glad you are finding the switch to GF easy enough, and that it has given you the boost to your overall health and fitness goals. You asked about supps over in my BodySpace. I had to cut out pre-mixed RTDs (ready-to-drink shakes) and MRPs (meal-replacement powders) because they all have some gluten in them. But I called several of my supp companies and asked about gluten in their products. They were very helpful. A couple of my favorite supps are from iSatori, and they confirmed that only their MRP "EatSmart" had gluten. So I am still taking a couple of their supps.
EAS assured me that their simple whey protein was gluten free, so I use that for all my protein shakes.
So don't hesitate to call a company up and ask.

In my year of GF eating I've only had just a couple of things made with the pre-packaged GF mixes or ready-made on the shelf.
First of all, THEY ARE TOO EXPENSIVE for my budget.
Second, they rely too heavily on low-nutrient flours--corn starch, potato starch, tapioca flour, rice flour. These are the equivalent of the normal person's refined white flour. I didn't eat white bread before GF. I'm certainly not going to eat simple-carb flours that will spike my blood insulin level as fast as sugar does. Nope. I'm going to use the more nutrient-rich flours (the equivelant of the normal person's whole-grain brown bread products).
Third, the ready-made stuff usually doesn't taste as good as what I can make myself.

I was diagnosed 3 years ago with Celiacs. It's amazing how much mainstream products are actually Gluten free...its all about reading labels...which is no fun!
My main sources of carbs are Gluten free oats and sweet potatoes, I am in LOVE with the vans gluten free blueberry waffles though. I used to have them and a protien shake as my postworkout meal...yumm!

Hop on over to our GF bodygroup and share the info. I'm not into buying all the GF commercially produced stuff. It's toooo expensive for my budget and really ends up being not as low GI/high nutrition as I'd like from my carbs. A blueberry waffle does sound good, though. Let me share a simple recipe for waffles that you could just toss some blueberries into. See the recipes in my blog--left side-bar.
