In my ever-growing quest to find ketogenic-friendly alternatives I ran across this gem..

Pizza Crust:
1 bag Pork Rinds, Crushed
1/2 Cup shredded mozzarella cheese
1/4 Cup grated Parmesan cheese
3 Eggs

Mix ingredients well. Press ingredients onto a nonstick Pizza Pan. Bake at 350F for 8 minutes, add toppings and rebake at 350F for 6-8 minutes.

Because of the very minimal carbs in the crust I personally go with a standard pizza sauce + pepperonis and cheese for toppings.

Wow, great recipe. What made you think of using pork rinds for a crust?

I found the recipe online while I was doing some exploration. I will also be trying to do fried cheesesticks using a pork rind coating, we'll see how that goes.

Pizza is god's gift to mankind--thanks for posting this!!

I'd never thought to use rinds for anything other than dipping!

I wonder how it'd be crushed fine with some garlic salt/onion powder/parsley for a coating on chicken??

i and smashed a chicken breast out nice and thin then rolled it in crushed Picante Pork Rinds and sauteed it up in some olive oil, dropped some mozzerella on top and finished it in the nuker for like 15 sec to get the cheese all melty...it was awesome.

just dont cook it too long in the pan because the nuker will do a lil more cookin when you are melting the cheese and tough chicken is the worst..

sorry, not pizza but someone said chicken :)

I made this tonight. 3 eggs was too much, the dough in the center takes so long to cook that the outer part of the crust burns by that time.

I redid it with 2 eggs, dough was perfect.

And instead of sauce and pepperoni, i used franks hot sauce, sharp cheddar and grilled chicken. PHENOMENAL!

Thats alotta calories for one pizza, a whole bag of Porkrinds is like 800 or so Cals, Plus cheese and pepperonis, etc, etc

Probably 1200+ cals for the pizza, you guys eat the whole thing at once? how big of a pan do you guys use?

Wait I dont understand how to make this. You mix everything in one bowl then put it all in a pan or do you mix the eggs with the pork rinds, make a crust then add the cheese n stuff? You didnt explain it very well.

I'll explain it for you.

Mix the eggs, cheese, crushed pork rinds and i added spices(salt pepper parsley and garlic powder) together. flatten out and put on a non stick pan and bake for around 10 mins, make sure the center is starting to harden.

take out put on sauce, cheese and toppings, bake for another 8-10 mins. let cool, voila.

remember try this with 2 eggs rather than 3. dough browns and crisps much better.

I used a sheet pan and just spread the dough out as far as it would go. Also, i used franks hot sauce and chicken rather than sauce and pepperoni. 2 slices filled me up, put it in the fridge and ate the other two slices for lunch today.

??? I don't think he means a giant bag of pork rinds bro just a little one I have some here that work out to about 300cals for the whole bag
